Ingredients: 600g salmon fillet, 800g baby potatoes, 1 bunch fresh dill, 200g sour cream (kermaviili), 1 tbsp lemon juice, butter & oil for frying, salt, black pepper.

Instructions: Boil potatoes in salted water until tender; drain and toss with butter and chopped dill. Mix sour cream, dill, lemon juice, salt, and pepper for the sauce; chill. Cut salmon into portions, season with salt and pepper. Sear in butter and oil skin-side down for 3–4 mins, flip and cook for another 1–2 mins.

2. Traditional Finnish Salmon Soup (Lohikeitto)
Rich, creamy, and deeply comforting, this famous salmon soup with fresh dill is a staple of Nordic hospitality.

Ingredients: 400g salmon (cubed), 6 potatoes (cubed), 2 carrots (sliced), 1 onion or leek (chopped), 800ml fish stock, 200ml heavy cream, 10 allspice berries, 1 bay leaf, salt, 1 bunch fresh dill.

Instructions: Bring fish stock to a simmer with onion, carrots, potatoes, allspice, and bay leaf for 10–15 mins. Add salmon cubes and heavy cream. Gently simmer for 5 mins until the fish is perfectly cooked. Remove from heat and stir in fresh chopped dill.

3. Meatballs with Mashed Potatoes & Lingonberry Jam
A cherished Finnish comfort food classic served with rich brown gravy, velvety potato puree, and tart wild lingonberries.

Ingredients: Meatballs: 500g minced meat, 100ml breadcrumbs, 150ml sour cream or milk, 1 onion (chopped), 1 egg, salt, black pepper. Mash: 1kg floury potatoes, 50g butter, 200–300ml warm milk, salt. To serve: Lingonberry jam & pickled cucumbers.

Instructions: Soak breadcrumbs in sour cream. Sauté onion. Combine all ingredients into a smooth mixture, shape into balls, and bake at 225°C (435°F) for 15 mins. Boil peeled potatoes, mash with butter and warm milk until fluffy. Serve with gravy, lingonberries, and pickles.

4. Karelian Pasties (Karjalanpiirakka)
A traditional rye-crust pastry filled with creamy rice porridge—the ultimate Finnish bakery icon.

Ingredients: Filling: 200ml porridge rice, 200ml water, 1L milk, 1 tsp salt (cook into thick rice pudding & cool). Crust: 200ml water, 1 tsp salt, ~450ml rye flour, 50ml wheat flour. Glaze: 50g melted butter + 100ml hot milk.

Instructions: Mix crust ingredients into a dough, divide into 15–20 pieces, and roll into thin ovals. Spread rice porridge in the center and crimp edges inward with fingers. Bake at 275°C (525°F) for 10–15 mins. Brush immediately with melted butter-milk glaze.

5. Cinnamon Buns (Korvapuustit)
Flavored with aromatic cardamom, cinnamon, and pearl sugar, these "slapped ears" buns are the heart of Finnish coffee culture (fika).

Ingredients: Dough: 500ml milk, 50g fresh yeast, 200ml sugar, 1 tbsp ground cardamom, 1 tsp salt, 1 egg, ~1.3–1.5L flour, 150g butter. Filling: 100g softened butter, 100ml sugar, 2 tbsp cinnamon. Topping: Egg wash & pearl sugar.

Instructions: Dissolve yeast in warm milk; add sugar, spices, egg, and flour gradually. Knead in butter and let rise. Roll dough flat, spread butter, sugar, and cinnamon. Roll tightly, cut diagonally into triangular pieces, and press the top down. Proof, brush with egg, sprinkle pearl sugar, and bake at 225°C for 10–12 mins.

6. Rice Porridge with Butter & Berries
A comforting, slow-cooked rice pudding topped with a pat of butter, cinnamon, and wild northern berries.

Ingredients: 200ml porridge rice, 200ml water, 1L whole milk, 1 tsp salt. To serve: Cinnamon, sugar, lingonberries or butter.

Instructions: Boil water, add rice, and let water absorb. Add milk, bring to a boil, then reduce heat to low. Cover and simmer gently for 45–50 mins, stirring occasionally. Season with salt and serve hot with cinnamon, sugar, and wild berries.

7. Herring on Archipelago Rye Bread
Dense, sweet-savory dark Archipelago bread layered with cured herring, red onion, and dill—a taste of the Baltic coast.

Ingredients: 4 slices dark archipelago bread, butter, 200g pickled or Matjes herring, 1 red onion (thinly sliced), capers, fresh dill.
