Authentic Finnish Salmon Soup (Lohikeitto) – Recipe
Finnish salmon soup is a quick everyday meal, but also a beloved dish for guests. Enriched with cream cheese, you'll get a wonderfully creamy soup. Serve it with authentic rye bread. With a little variation, you can make fish soup: replace the cream with dill-flavored cream cheese, it adds acidity to the dish.
Traditional Finnish Salmon Soup (Lohikeitto)
Lohikeitto is a classic of Finnish cuisine, a comforting and hearty soup that warms both body and soul. This creamy and rich soup gets its flavor from fresh salmon, potatoes, leek, and a generous amount of dill.
**Time:** Approximately 30-40 minutes
**Servings:** 4-6
Ingredients:
* **Salmon:** 500-600 g (1.1-1.3 lbs) salmon fillet (skinless, boneless), cubed
* **Potatoes:** 5-7 medium potatoes, peeled and diced
* **Leek:** 1 small leek (or 1 large onion), thinly sliced
* **Butter:** 2 tbsp butter
* **Water:** 1-1.2 liters (4-5 cups) water (or fish stock)
* **Fish Bouillon Cube:** 1-2 cubes (or 1 tbsp fish fond), if using water
* **Bay Leaf:** 1-2 pcs
* **Black Peppercorns:** 5-7 whole black peppercorns
* **Salt:** 1-2 tsp (to taste)
* **White Pepper:** A pinch
* **Cream:** 2-3 dl (approx. 0.8-1.2 cups) heavy cream or cooking cream
* **Dill:** A large bunch of fresh dill, chopped
Instructions:
1. **Prepare Vegetables:** Peel and dice the potatoes into generous 2 cm (approx. 0.8 inch) cubes. Rinse and slice the leek into thin rings. Cut the salmon into about 3-4 cm (1.2-1.6 inch) cubes.
2. **Sauté:** Melt the butter in a large pot over medium-low heat. Add the leek slices (or chopped onion) and sauté for a few minutes until softened but not browned.
3. **Cook Potatoes:** Add water (or fish stock), fish bouillon cubes/fond, bay leaves, and whole black peppercorns to the pot. Bring to a boil. Add the potato cubes. Cook until the potatoes are almost tender, about 10-15 minutes.
4. **Add Salmon and Cream:** Reduce the heat. Gently add the salmon pieces and cream to the pot. Do not let the soup boil vigorously from this point on, to keep the salmon moist and prevent it from breaking apart too much. Let it simmer gently for just a few minutes, until the salmon is cooked through (its color will change from pink/orange to opaque).
5. **Season:** Remove the bay leaves. Taste the soup and add salt and a pinch of white pepper as needed.
6. **Finish:** Stir in a generous amount of fresh chopped dill just before serving.
7. **Serve:** Let the soup rest for a moment before serving. Serve warm with fresh rye bread or archipelago bread.
**Tip:** You can also use some smoked salmon instead of a portion of the fresh salmon for a smokier flavor.
Done!
Our Finnish vacation was a tapestry of memorable moments, but the simple, profound pleasure of a perfectly crafted bowl of Lohikeitto stands out. It's more than just soup; it's an invitation to savor the warmth, hospitality, and authentic flavors of Finland. So, on your next Nordic adventure, be sure to seek out this creamy, comforting masterpiece. *Hyvää ruokahalua!* (Enjoy your meal!)
